Recipe Razzle Dazzle: Make a Mousse!
CHOCOLATE MOUSSE (Serves 4-6)
200g Couverture Noir 63% Dark Chocolate Buttons,
4 Separated Eggs,
15g Butter,
1 Tablespoon Rum,
Your choice of decorative chocolate shavings or sprinkles.
Place chocolate pieces in a bowl with butter. Cook on "high" in your microwave, or in a bowl or pot over a saucepan of boiling water, for 2 minutes, stirring after the first minute. Stir in egg yolks and rum, whisk egg whites until stiff, and fold into the mixture. Pour mixture into 4-6 individual dishes and chill until set. Decorate with chocolate sprinkles to serve.
